Atmosphere and style
Designed in a typical Parisian style, Brasserie Grand Chêne at Lausanne Palace has captured the charm of the past.
Green leather benches, polished parquet flooring, brass ornaments and a solid wooden staircase give it a pleasantly classic and somewhat theatrical atmosphere. Take a comfy seat at one of the tables on the raised platform, or spend some quality time at the bar. You will feel as if you are both spectator and actor in a play set in a gourmet restaurant.
Any moment now, a member of a rock band or a glamorous French actor could enter – as indeed they have done on many occasions in the past. Read the brass plaques engraved with famous names adorning the walls to see who was here before you.

Lausanne Palace brings the real thing to your doorstep
As the year draws to a close, it's time for the Brasserie du Grand-Chêne to make a splash with its finest special effects, namely its prestigious festive takeaway dishes. From 16 to 31 December, gravlax-style marinated salmon with fennel and cucumber will be served with buckwheat flour blinis. A perfect first session before the Richelieu pie with foie gras and black truffle. As a finale, the traditional ice cream log is adorned with Grand Cru chocolate, nougat and a creamy Calamansi lemon.
For Christmas, on 24 and 25 December, the Brasserie pulls out all the stops with a leg of Swiss capon stuffed with foie gras, served with pumpkin gnocchi, marrons glacés and an Albufera winter truffle sauce. On 31 December, Swiss beef fillet Rossini style with Anna apples and Brussels sprouts will be just the thing to round off 2024 in style. And in flavour...
